    Masakan Pakis
    RESEP MASAKAN TUMIS/ OSENG-OSENG DAUN PAKIS/ PAKU BUNGA PEPAYA

    Bahan dan Bumbu :
    • 2 ikat daun pakis
    • 150 gram bunga pepaya
    • 100 gram daun pepaya
    • ½ sdt garam
    • 150 gram ikan tongkol
    • 1 sdt air jeruk nipis
    • 3 sdm minyak untuk menumis
    • 1 batang serai, belah dua, simpul
    • 3 lembar daun jeruk
    • ½ lembar daun kunyit
    • 1 sdt garam
    • ¼ sdt kaldu instant
    Haluskan :
    • 4 butir bawang merah
    • 3 siung bawang putih
    • 10 buah cabe merah keriting
    • 2 cm jahe
    CARA MEMBUAT TUMIS SAYUR PAKIS BUNGA PEPAYA :
    1. Cuci daun pakis agar tidak berlendir, petik daun dan batang mudanya, sisihkan.
    2. Cuci daun pepaya dengan air panas, tiriskan. Taburi dengan garam, remas-remas, cuci kembali.
    3. Lumuri ikan tongkol dengan air jeruk nipis dan garam, lalu kukus hingga matang, angkat. Suwir-suwir dagingnya, sisihkan.
    4. Panaskan minyak, tumis bumbu halus hingga harum. Masukkan serai, daun jeruk dan daun kunyit, aduk rata. Masukkan bunga pepaya, masak setengah matang.
    5. Masukkan daun pakis, ikan tongkol, daun pepaya, garam, dan kaldu instant. Masak hingga semua bahan matang, angkat. Sajikan.
    Tips : Cara lain agar daun pepaya tidak terlalu pahit, setelah disiram air panas atau direbus, remas-remas daun pepaya dengan air kapur sirih.
